Smitenwood honey

Smitenwood honey is raw honey.  It is simply filtered meaning that it retains it’s enzymes, nutrients and antioxidants leaving it unprocessed as nature intended.

In 2020, we harvested our honey twice, firstly in June and then again in August.

Honey harvested at different seasons and locations may taste different depending type of nectar that has been collected by the bee.

Nectar is the main ingredient of honey and is broken down in a bees second stomach, called a honey sac.  Enzymes break down the sugars from the nectar into fructose and glucose. 

Honey will remain liquid for longer if it has a higher fructose level.  Honeys containing more glucose than fructose are therefore more likely to crystallise quickly.
